Mint, lime, and passion fruit-marinated prawn
Prawn, mint, lime, strawberries, passion fruit, extra virgin olive oil, salt, pepper.
Carefully remove the shell from fresh prawns. Also remove the intestine by making a tiny incision on the back. Prepare a marinade by emulsifying all the other ingredients in a bowl: combine a few mint leaves, the juice and zest of a good lime, a strawberry cut into pieces, a bit of passion fruit pulp, a few tablespoons of extra virgin olive oil, salt, and pepper. Lay the prawns in the marinade and turn them over to coat them completely, then cover with plastic wrap and refrigerate for at least an hour to let them soak up the flavours. Once marinated, drain the prawns and heat the grill or pan. When it is scorching hot, sear the prawns for about a minute and give them another squeeze of lime.
